What are the things required to make Railway Style Veg Cutlet?
2 cups boiled and mashed potatoes
1 medium size beetroot (peeled and finely chopped)
1 carrot (peeled and finely chopped)
5-10 French beans (chopped)
1/4 cup green peas
1/4 cup bread crumbs
1 tablespoon oil
1 inch ginger (finely chopped)
2-3 green chillies (finely chopped)
1/2 tsp turmeric powder
1 tsp red chilli powder
salt as per taste
2 tbsp green coriander
for coating
1/2 cup flour
1 tsp red chilli powder
salt as per taste
water as per need
1 cup bread crumbs
oil for frying
How to make Railway Style Veg Cutlet at home?
- First of all heat oil in a pan. Add ginger and green chillies and fry for a few seconds. Now add beetroot and carrot and cook for 2-3 minutes. After this, add French beans, peas, salt, turmeric and red chili powder, mix well and let it cook for a few minutes.
- Now add mashed potatoes to it and mix everything well. After cooking the mixture for some time, take it out in a bowl and let it cool. When it cools down, add bread crumbs and green coriander and mix.
- Divide the mixture into equal portions and prepare them in diamond or shape of your choice.
- Prepare a thin batter by mixing flour, red chili powder, salt and water in a separate bowl. First dip the cutlets in this solution and then wrap them in bread crumbs.
- Now heat oil in a pan and shallow fry the cutlets until they become golden and crisp from both sides.
