Lauki Uttapam Recipe: In summer, green bottle gourd is available in abundance in the market. It is considered very beneficial, but whenever it comes to making and eating it, everyone makes faces. There must be some child or elder in your house who would make faces on hearing the name of bottle gourd. If there is any truth in this, then today we have brought for you such a recipe made from bottle gourd, after eating which you will become crazy about this boring vegetable.

Today we are telling you about such a healthy and tasty recipe, in which whole bottle gourd is used, but the eater will not even be able to recognize that ghee has been used to make it. This is the recipe of bottle gourd uttapam. This recipe presents the famous South Indian dish with a bottle gourd twist. It is not only very tasty, but also becomes very soft and crispy. Its taste is such that not only children but even adults will eat it with great enthusiasm. Let us know this recipe of bottle gourd which is prepared instantly.

Ingredients:

  • 1 small gourd
  • 1 onion finely chopped
  • 2 green chillies
  • salt as per taste
  • 1 boiled potato
  • 1 cup rice (soaked for 1 hour)
  • 1 inch ginger
  • 1 tsp black pepper powder
  • a little coriander
  • 1/2 tsp fruit salt or baking soda
  • Ghee as per requirement

for tempering

  • 1 tablespoon oil
  • 1 tsp mustard
  • 1/2 tsp cumin
  • 1 tbsp white sesame seeds
  • 7-8 curry leaves chopped
  • 1 tsp red chili flakes

Method of making:

1. To make bottle gourd uttapam, first peel the bottle gourd and grate it. Now add some salt to it and leave it for 10-15 minutes so that the water gets drained.

2. After 10-15 minutes you will see that the excess water from bottle gourd will come out. Squeeze this water lightly, but do not throw away the water.

3. Now prepare a smooth batter by adding soaked rice, boiled potatoes, ginger, green chillies and remaining water of bottle gourd in the mixer jar.

4. Take out this batter in a big bowl and add grated bottle gourd, onion, green coriander, black pepper powder and salt as per taste.

5. Heat oil in a small pan. Prepare aromatic tadka by adding mustard seeds, cumin seeds, white sesame seeds, curry leaves and red chili flakes. Now add this tempering to the batter. Finally add fruit salt or baking soda and mix gently.

6. Apply some ghee on a hot pan and spread the batter and give it a round shape like uttapam. Roast it on low to medium flame until it becomes golden brown and crispy on both sides. Your healthy, soft and delicious bottle gourd uttapam is ready.

You can serve this uttapam with green chutney, tomato sauce or curd. This is also a great option for children’s tiffin because it provides balanced nutrition of vegetables, rice and potatoes.
